I am exhausted.

Today was quite possibly the longest day of my life. I was officiating a volleyball tournament from 8:30-4:45 and then headed straight to the Mona Lisa from 5-11. That equals 15 hours of being on my feet today.

Did I mention that I'm exhausted?

Happy Anniversary to us.

Today is our 4th anniversary and my eternal companion is in Vegas. What a rip off.

best investment we've ever made.

Forget the stock market... that got us NO WHERE!!!!!
We have decided that Chris's iphone and a few bucks to buy a couple movies for the iphone is definitely the best investment EVER! the best part is that it attracts every kid in the building. We don't know these little boys and will probably never see them again, but for 30 minutes they were all best friends while watching A BUGS LIFE :)And this was my date to the movies the other day. Meet my boyfriend, Spiderman Cody. Chris found Cody's Halloween costume in our closet last week and thought it would be fun to show Cody... not realizing I hid it for a reason, and a really good reason!! He refuses to go anywhere without it now!

Tax Day Nightmare

I hate taxes. sales tax, property tax, income tax... you name it. Now, I recognize that they are important but I still hate them. Especially because both Chris and I are self employed and I don't get taxes taken out of my pay checks. The only benefit of that is that we have a lot of write offs.

This year we took our taxes to a different accountant. We sent them to the same place that was doing Chris's company taxes in Utah... I didn't get everything mailed down until about 2 weeks ago and they didn't get taken in until Monday :) Chris kept reassuring me that we would either owe very little or maybe even get a little back but I have had this awful feeling in my stomach for a few weeks that we were going to owe A LOT! I got the call Tuesday at like 2 p.m. from the tax preparer, we had to file for an extension which is fine but she informed me that the payment was still due today! My stomach sank, we owed money :( She proceeded to tell me that we owe $4,000!!! WHAT?!?!?!? I was on the verge of bawling the whole way home to tell Chris. He was shocked as well.


Long story short, 3 hours later and many phone calls between the accountant and myself because I just couldn't understand it, we discovered that they had counted both of our incomes twice!!! When she made the changes, the results are now exactly the opposite. woohoo!!!

world of colors!

We have been working on learning colors a lot at our house. Orange blue and green haven't been a problem, pink is coming right a long. red and purple are a work in progess.

I asked Cody yesterday what color my eyes are...

his response was, "Pink!"

when I said no he thought really hard and said,


"ROOTBEER!!!!"

another recipe

We have our church missionaries over for dinner a couple times a month. I love it because it gives me a chance to make something fun and different. I am not sure where I got this idea, but it sounded yummy so I tried it.


Italian Meatball Subs!


Growing up we didn't eat very much hamburger meat, simply because my Mom wasn't a huge fan. So as an adult, I don't like it very much either. AND... I don't eat sausage because my best friend Sally (family pet pig) was butchered (okay not actually butchered but he shot her right as I turned around to walk back to the house) right in front of my eyes when I was in 6th grade. VERY TRAMATIZING!!


So, when I thought about making meatballs my stomach definitly turned, knowing that it would be ground beef and sausage. I do better if I don't know what is in the stuff I am eating.


BUT.... I DID IT!


I used sausage in some lasagna I made not too long ago, it was the mild italian sausage so this time I thought I would try the spicy, since the mild was REALLY mild. Spicy italian sausage is just that SO SPICY, I was sweating!


Here is the recipe I used:


1 lb. ground beef
1 lb. bulk Italian pork sausage
1 cup Progresso® Italian Style Bread Crumbs
1 small onion, finely chopped
2 eggs
2 (14-oz.) can pizza sauce
8 oz. (2 cup) shredded mozzarella cheese

and two skinny loaves of french bread. (about 2.5 in in diameter)


I got the recipe from pillsbury's website and they obviously suggested to use their bread that is refrigerated and you just cook it but those can be expensive so I opted for a couple loaves of french bread from the bakery. ($1.50 each)


Okay, so combine the sausage, gound beef, bread crumbs, onion and eggs. mix well with your hands! roll into balls about 1.5 in diameter. it makes about 30. place meatballs in frying pan and cook on med/low for about ten minutes flipping them over occasionally. Place the pizza sauce in a medium pot on low and add meatballs as they finish cooking. Let it simmer for ten minutes or so.

Turn broiler on to 400 degrees and get your bread ready for sandwiches. Instead of sprinkling the mozzarella cheese on top of the meatballs I put it on the bread and stuck it under the broiler for a few minutes so it was nice and melted.


The missionaries loved it, Chris like it a lot (other than it was too spicy for us) and I thought it was a recipe worth keeping.

What's in a sneeze?


This may be EXTREMELY random but I have had a head cold since Friday night and this has been a big deal for me the last few days. I don't even know if its a head cold or Strep, my throat isn't sore but my glands are SO swollen and sore, and my sinus... don't get me started there. anyway, besides blowing my nose 30 times a day and swallowing "softly" I have this annoying, "I think I need to sneeze" feeling constantly!!

Normally, I LOVE SNEEZING. Not sure why, but I do. nothing like a good hearty sneeze! not this time tho. It hurts my nose so bad when I sneeze that I have caught myself forcing my sneezes to go out my mouth instead of through my nose.

So, my question is... are you a nose sneezer or a mouth sneezer.


I have found that when I sneeze through my mouth it only subdues my need to sneeze temporarily. but if I can sneeze through my nose it really takes care of the problem :)

AND, I decided that mouth sneezers are the ones those people who can sneeze like 12 times in a row and they are ridiculously loud!

Just a thought.
